Aviyal is onam special sadya recipe. Aviyal is one of the traditional south Indian dish. It's easy, quick, healthy and delicious recipe made with a lots of vegetables, coconut and curd. It's best goes to steam rice or as a side dish for any adai recipe.

First, wash all vegetables and cut into 1" stri peases.

Heat a Kadai add all vegetable pieces, turmeric powder, salt, a few curry leaves, and little water, and mix well, cove, and cook on slow flame for 10-12 minutes.

Put coconut in a blender jar add green chilies, ginger, cumin seeds, and little water and blend to a coarse paste.

Once the vegetable is cooked lower the flame and add ground coconut paste and curd mix it well and cook for 3-4 minutes.

Heat coconut oil in a tadka pan adds mustard seeds after spluttering add curry leaves and saute a few seconds. Now add this tempering into the cooked vegetables and mix it well. Aviyal is ready.

Now transferred into the seving bowl and Serve it.
