A simple yet spectacular dish. The bones, pork belly, chorizo, and blood sausage used for this cocido are all traditional products from Extremadura.

A simple yet spectacular dish. The bones, pork belly, chorizo, and blood sausage used for this cocido are all traditional products from Extremadura.

Soak the chickpeas the day before in water with coarse salt. Drain the chickpeas.

Rinse the bones and meats under running water to remove any impurities.

Place all the ingredients—meat, bones, pork belly, ribs, chickpeas, garlic, onion, tomato, potato, and carrot (except the chorizo and blood sausage)—into the GM pot and cover with plenty of water. Add 1 teaspoon of smoked paprika (Pimentón de la Vera).

Set the pot to the stew setting for 45 minutes. Close the lid and the valve.

When finished, release the pressure to open the lid. Add the chorizo and blood sausage, then set the stew setting for another 10 minutes. Before adding the chorizo and blood sausage, you can remove and strain some broth to make a soup.

Enjoy: first, serve the chickpeas, then the meats (pringá).
