In a pan add oil once the oil is heated add cumin & mustard seeds,thing, and let it splutter.

Then add green chilies, and ginger and saute them for about a min.

Then add tomatoes, red chili, turmeric & coriander powder, and salt, and cook it until the tomatoes turn soft and mushy.

Then add curd and cook it for a min. Then go in some water,garam masala & Kasori methi,sugar and mix it well and cook it for another minute

Then add malai and stir it well.Then add sev and give it a mix and cook for a min.Then finish it by adding freshly chopped coriander.

Note : Add sev into the sabji while you are ready to eat if you add it before and eat later the sev will get soggy.
