Wash and peel the plantains. They should be ripe, with black spots on the peel.
Grate the cheese.

Wash and dry a baking dish (such as a Pyrex).
Butter the entire base and sides of the dish.

While you prepare the dish:
Place a baking pan with a little water in the oven to create a water bath.
Preheat the oven to 350°F (180°C).

Cut the plantains in half and arrange them in the baking dish.
Sprinkle the grated cheese over the plantains until they are covered.

Bake for 15 minutes. Serve hot.
