An amazing twist to the plain old Potatoes for Breakfast and Lunchbox. I have used Thyme or Za'atar in this well-blended simple dish.
It's the best alternative for meals. Be it Breakfast or Lunch, it's absolutely good. It's also the best option for Lunchbox. And not only that, I also prefer it for Suhoor in Ramadan. Not only, Ramadan, I also make it whenever I fast other than the Month of Ramadan.
It's a delicious side dish and goes very well with Rotis, Chapatis, Phulkas, and Parathas. Though it's great even with simple boiled Rice, it tastes more yummy with any Indian Bread. Thyme or Za'atar as it's popularly known is a simple spice blend from the Middle East. It's used extensively in their cooking. Both the Middle Eastern and the Mediterranean Cooking has it in ample amounts. It's a flavourful one at that. Adds a lot of flavour to the dish as well as a lovely colour with loads of aroma.

Peel and dice Potatoes into small cubes. Heat Oil in a Kadai and add Asafoetida at first. Keep the heat on a low. Now add chopped Onion and the Ginger garlic paste followed by the rest of the powdered spices. Also the Potatoes. Mix well and cook for a few minutes. After done, it's now time to add Thyme.

Add it accordingly. You can add a little more than mentioned as well. Mix it up again. Cover and simmer for 10-15 minutes on a low heat only. Add a splash of water if required. Otherwise it's perfectly okay.

Garnish with Coriander Leaves just before dishing it out. Serve it piping hot with your favourite Bread. Enjoy!
