Firstly we can prepare filling, heat oil into a pan crackle mustard seeds,thing, and curry leaves.

Now saute onions and spices and cook for a few minutes.

Now add boiled and mashed potatoes and mix well in spices. Add chopped coriander also. Keep aside.

In a large mixing bowl add semolina and curd and mix well. Keep aside for 10 minutes.

After 10 minutes add little water and grind in a grinder, making a fine paste.

Then add salt and baking soda and mix it.

Now pour the batter into a nonstick pan. Make small 2 pancakes at the same time. And spread filling in one side. (showing in the picture)

Cook for a few minutes and cover with the unfilled side. Roasted until golden brown. Cut from the center-like a sandwich.

Ready semolina pancake sandwiches serve hot with sauce or any chutney.
