Salmon & Cream Cheese Pasta
An easy and quick but tasty light meal.
Steps

Preheat oven to Gas Mark 5 or electric equivalent (Circotherm 160).

Place the salmon fillets on kitchen foil, lightly season and smear on the butter. Make a parcel and cook in the pre-heated oven for 15-18 minutes. When cooking comply, remove the fish skin and use a fork to separate the flakes of fish.

Meanwhile, add the pasta to a saucepan of boiling, salted water and cook according to instructions to reach al dente by the end of Step 4 below. Drain the pasta through a colander, adding a knob of butter.

Whilst the pasta is cooking, gently fry the onion, garlic, spring onion and chili. Stir in the cheeses and, when all cooked, add the flaked salmon. Stir gently but thoroughly, if needed adding a little of the pasta cooking water to the sauce to get your desired consistency. You only want to spend about 2 minutes on this Step.

Stir in the pasta and serve immediately or, if preferred, serve the pasta directly onto your dishes and then top with the sauce. Sprinkle on a little black pepper if that’s to your taste.
