Mama E's saucy roast chicken

This dish, one of the few that my mother made using the oven, was one of my childhood favourites. The recipe is pure simplicity. Chicken thighs and drumsticks are piled into a baking dish, then covered with a ridiculous amount of onions as well as a sauce made with soy, tomatoes, and garlic. The whole thing is tightly covered with foil and baked until done. The result was fall-off-the-bone chicken, with a jammy onion and tomato sauce that had hints of barbecue. For my version, I ran with the barbecue idea and made my own sweet and tangy sauce. I also pre-broiled my chicken, for two reasons. First, it browned the meat and skin, which added flavour. Second, it rendered a lot of the fat out ahead of time. I love my mom's chicken, but her sauce always had a pool of grease floating on top. Pre-broiling prevents that. Less fat, more delicious sauce to coat ridiculously tender chicken. Awesome.

Add the first 9 ingredients to a small pot and put it on medium heat. Bring to a bare simmer and cook for 5 minutes, whisking often.

Trim any excess skin and fat from the chicken quarters. Season them with salt and freshly cracked black pepper and lay them skin-side up on a baking tray. Broil on high for 20 minutes, until they're lightly browned and have rendered their fat.

Spread the onions on the bottom of a high-sided baking dish. Lay the chicken on top, then douse the pieces with the sauce. Cover tightly with foil. Place the dish in an oven preheated to 275 F and bake for 1 1/2 hours.

Remove the dish from the oven and carefully pull off the foil. Baste the chicken, then put the dish back in the oven for 15 minutes, uncovered, on high broil. Let rest for 10 minutes before serving.
