Rub the flour and shortening together with your fingers until well combined.

Add the soda and knead the dough.

Knead until you have a smooth, compact dough. Shape into 2.5 oz (70 gram) balls.

Roll each ball into a flat circle, add the dulce de leche (cajeta) filling, and fold to close.

Bake for 20 minutes at 350°F (175°C).

Once golden on both sides, coat with sugar.

Let cool and enjoy.
