Ingredients

Makes 25 empanadas
  1. 2.2 pounds(1 kilo) all-purpose flour (about 8 cups)
  2. 1 cupsoda (such as lemon-lime or cola) (240 ml)
  3. 1.1 pounds(1/2 kilo) shortening (about 2 1/2 cups or 500 grams)
  4. Filling

    Rub the flour and shortening together with your fingers until well combined.

    Add the soda and knead the dough.

  3. 3

    Knead until you have a smooth, compact dough. Shape into 2.5 oz (70 gram) balls.

    Roll each ball into a flat circle, add the dulce de leche (cajeta) filling, and fold to close.

    Bake for 20 minutes at 350°F (175°C).

  6. 6

    Once golden on both sides, coat with sugar.
