This was my first time making Massaman curry. I researched from several sources and adjusted the recipe to suit my own taste. It does take a bit of time to make, but the delicious flavor is worth the effort. Give it a try!

Place a pot over medium-high heat and pour in the light coconut milk. When it comes to a boil, add the beef and then the tamarind paste. The tamarind helps tenderize the beef. Simmer the beef for about 45 minutes to 1 hour until tender.

While waiting, peel and cut the potatoes into small pieces. Dice the onion into cubes.

In another pot over medium-high heat, gradually add the coconut cream. This step is for frying the curry paste. When the coconut cream starts to boil, add the Massaman curry paste and stir-fry until fragrant and well combined.

Add the bay leaves to the curry mixture, followed by the braised beef. Stir to combine and let it cook for a while.

Add the prepared potatoes to the pot and let it simmer until the potatoes are almost cooked.

Once the potatoes are cooked, add the diced onion.

Season with coconut sugar and fish sauce to taste.

Finally, add the roasted peanuts (you can use dry-roasted peanuts instead). Stir for a moment, turn off the heat, and serve the beef Massaman curry in a bowl.
