For this recipe, we will use raw banana and mustard oil. You can make it in any oil but mustard oil will enhance the taste of the dish. You can use spring onion greens in place of coriander leaves. You can cut the banana in your desired shape and size. Bananas get black very fastly so make sure you coat them with spices immediately.

In a pan add 1/2 cup water to that add coriander seeds, cumin seeds, green and black cardamom, cloves, black peppercorns, cinnamon stick, mustard seeds, and dry red chilies. Then keep the pan on a flame and allow it to boil. Once started boiling lower the flame and cook it for 3-4 minutes then off the flame and allow it to cool down a bit.

Once cool down then grind it with onion, ginger, garlic and pickle to a fine and smooth paste. Keep it aside and let's start peeling and cutting the bananas for peeling cut the top and bottom of the banana that longitudinally peel the cover of the banana from all sides. Like that peel all 4 bananas then cut them into 3 pieces and then cut all the 3 pieces longitudinally. If the banana is short then only cut it longitudinally. Before cutting it prick them all over with a fork or pointed knife

Then add a tsp each of turmeric, powder red chili powder and salt to the cut bananas. Add 1 tbsp gram flour and 1 tbsp grounded masala mix to it and mix well. Now in a wok add mustard oil and heat it to the smoking point then lower the flame and put the masala-coated bananas to it in a row don't overlap them. After 3-4 minutes flip them over and cook on another side too. Once done, take them out and you can also serve them as a snack. It tastes awesome.

You can use any oil of your choice but mustard oil gives and amazing flavor to the dish. Now in the same oil add fenugreek seeds and asafoetida and saute for a while then add the grounded masala mix and saute it. Then add 1/2 turmeric powder to it. This gives a beautiful colour cook the masala mix until it starts to ooze oil and gives an amazing aroma then add the fried banana to it and saute well. Then add a glass of water and boil it on a high flame then lower the flame.

Then add 1/2 tsp garam masala powder and kasoori methi to it then cover it and cook it for 15-20 minutes or until done. By the time the bananas will absorb sufficient water and the curry will thicken. You can adjust the water as per your requirement or like. Serve it hot with the choice of your bread and steamed rice.
