American Creole & Cajun. Rice dish of French, African & Spanish influence, consisting mainly of meats and vegetables mixed with rice.
Steps

Wash chicken breasts and shrimps separately and allow them to dry out. You may use any method to dry the excess water.

Wash the rice and allow it dry out too.

Season the chicken breasts and shrimps with respective ingredients on a mix bowl. Allow the ingredients to kick in for 5 - 10 mins

Put a saucepan on a medium high heat and apply the vegetable oil.

Once the oil catches heat, sauté the chicken breasts until browned.

Once the breasts are browned, remove them and sauté the shrimps on the same pan until they are no longer pink but browned.

Remove the shrimps once they're ready and sauté the sausage flanks on the same pan about 3 mins and remove them.

One the same pan, sauté the onions and the bell peppers by stirring until tenderised about 1- 2 mins. Avoid to burn them.

Add garlic and thyme in the mix and continue stirring and the mix becomes aromatic enough, about 1 - 2 mins. Avoid to burn the ingredients.

Add in the blended tomatoes and allow it to cook about for about 3 - 5 mins.

Add in the rice and mix thoroughly until well combined. Then add water or vegetable broth.

Add some salt to taste and allow the rice to cook and dry about 10 -15 mins on a low heat(simmering)

Once the rice is dry, add in the meats and mix well to combine. Allow the rice mix to dry further if possible.

Once satisfies with the mix state. Turn off the the heat and garnish with scallions and serve.
