Back from Puy de Dôme with some delicious farm-fresh Saint Nectaire! Here’s a quick and easy way to cook it a little differently.

Preheat the oven to 400°F (200°C).

Beat the eggs with salt and pepper.
- 3
Melt the butter in a hot skillet and pour in half of the eggs.
- 4
Flip the omelet like a pancake and cook the other side.
- 5
Place the omelet in an oven-safe dish, cover it with thin slices of Saint Nectaire cheese, and put it in the oven while you make the second omelet.

Cook the remaining eggs in the skillet the same way.
- 7
Place the second omelet on top of the first, and bake for 5 minutes in the hot oven.
