Hello foodie friends... After festival season Khichdi is always comfort food. Here I am going to share one pot Khichdi recipe. Very very healthy and full of nutrition. Let's see how to make it.
Steps

Wash the daal and rice properly and soak them for 2 hours.

Now heat ghee in a wok. Add mustard seeds, and cumin seeds and let it crack. Now add asafoetida and all the whole spices followed by ginger and green chili paste.

Now add 1 by 1 vegetable of your choice. I took a potato, tomato, green peas, carrot, capsicum, bottle gourd, and eggplant. Saute it properly.

Remove water from the daal and rice and add it to a wok. Add peanuts.

Add all remaining spice and water. Cover it and let it cook on low to medium flame.
Between 3 to 4 times stir it and check the water level. - 6
Khichdi is ready to serve. Enjoy it with curd or curry. You can have it as it is.
