Season the chicken with salt, pepper, and ginger, and mix well. Add the egg white and mix. Add the cornstarch and mix again.

Let it rest while you prepare the other ingredients. Heat the oil and fry the chicken pieces until golden brown.

MAKE THE SAUCE: In a bowl, mix all the sauce ingredients together.

STIR-FRY THE VEGETABLES WITH THE CHICKEN: Heat a wok or skillet with a little oil and stir-fry the garlic and vegetables until just tender.

Add the chicken and sauce. Bring to a boil and let the sauce thicken.
