Firstly, pressure cooks the potatoes for 2-3 whistles. Wait till it cooks.once cool peel off the skin.

Roughly mash them well with a potato masher.

Additionally, take a bowl and add all the ingredients for appe stuffing : mashed potatoes, and all spices, fresh coriander.

Mix all the ingredients very well. Aloo stuffing is ready.
After that, divide the aloo stuffing into small balls. - 5
Firstly, take suji, in a large mixing bowl and now add whisked curd to it and mix really well.

Add finely chopped onion, tomato, capsicum, ginger paste salt to the batter.

After that, mix everything really well, if the batter appears too thick then add some water to it.

The batter should be of medium consistency just like idli batter.

After that, cover and keep the batter aside for 10-15 minutes to rest. Use it later to make appams.

Now, batter is ready, in the end add baking soda and mix gently. Do not over whisk the batter.

Now, heat appam pan and pour oil into every mould of the appe pan.

Method 1 : Now dip the aloo masala balls into the suji batter and put them into the appe pan mould.

Method 2 : pour a little suji batter into the mould, addthe potato masala ball to it. Additionally, cover this potato with suji batter.

Repeat the same process for each mould and cover them.

Let them simmer for 2-3 minutes on low flame. When the ape is golden brown from beneath, flip the side and continue cooking until golden brown from this side as well.

It can take 2 minutes.. Cook the suji appam till it golden brown from both sides. Take out in plate.

Finally, your hot and delicious stuffed suji appam or stuffed suji appe is ready to be served.

You can serve this Stuffed Suji Appe with any indian chutney or dip like green coriander chutney, coconut chutney, tomato ketchup etc.
