Ingredients

30 to 40 minutes
  1. 1onion, thinly sliced
  2. 1 teaspoonsweet paprika
  3. 2carrots
  4. 1celery stalk
  5. 2small turnips
  6. A fewpotatoes
  7. 1/3 cuptomato paste (80 grams)
  8. 4 1/4 cupswater (1 liter)
  9. 1vegetable bouillon cube
  10. 1/2 cupchickpeas (100 grams)
  11. 1/2 cupvermicelli noodles (100 grams)
  12. Fresh flat-leaf parsley
  13. 1 tablespoonolive oil
  14. 1 tablespoonras el hanout (3 teaspoons)

Steps

30 to 40 minutes
  1. 1

    Chop the onion and add it to a large pot with the olive oil.

  2. 2

    Cook the onion over low heat for about 10 minutes with the spices (ras el hanout and sweet paprika).

  3. 3

    Meanwhile, peel the vegetables and cut them into small cubes, except for the potatoes, which you should cut into large chunks.

  4. 4

    Add the vegetables to the pot along with the tomato paste, water, and vegetable bouillon cube.

  5. 5

    Simmer for about 20 to 30 minutes.

  6. 6

    Add the drained chickpeas and vermicelli noodles.

  7. 7

    For easier digestion of the chickpeas, you can add a teaspoon of baking soda.

  8. 8

    Simmer for another 10 minutes.

    When serving, sprinkle with fresh flat-leaf parsley.
