Ingredients

1 hour 30 minutes
Serves 1 serving
  • 3.5 oz (100 g)Pad Thai rice noodles (Sen Chan type)
  • 3large fresh shrimp
  • 1/2 blockfirm tofu
  • 1large egg
  • 0.35 oz (10 g)good quality dried shrimp
  • 0.7 oz (20 g)finely chopped pickled radish
  • 0.7 oz (20 g)finely chopped shallots
  • 1dried red chili pepper (pounded finely)
  • 1 tablespoonvegetable oil (for stir-frying)
  • For serving:
  • leavesGotu kola
  • Bean sprouts
  • Garlic chives
  • For the sauce:
  • 1 tablespoonfish sauce
  • 0.7 oz (20 g)tamarind paste
  • 0.7 oz (20 g)granulated sugar
  • 0.35 oz (10 g)palm sugar

Steps

1 hour 30 minutes
  1. 1

    Heat the oil in a pan and sauté the chopped shallots until fragrant.

  2. 2

    Add the palm sugar, granulated sugar, and fish sauce. Stir until the mixture caramelizes, then add a little water. Add the shrimp and cook until just done. Remove the shrimp and set aside.

  3. 3

    Add the noodles to the pan, then add the dried shrimp and pounded dried chili pepper.

  4. 4

    Add the egg and scramble it, then add the garlic chives and bean sprouts. Toss everything together.

  5. 5

    Arrange on a plate and serve.
