Heat the oil in a pan and sauté the chopped shallots until fragrant.

Add the palm sugar, granulated sugar, and fish sauce. Stir until the mixture caramelizes, then add a little water. Add the shrimp and cook until just done. Remove the shrimp and set aside.

Add the noodles to the pan, then add the dried shrimp and pounded dried chili pepper.

Add the egg and scramble it, then add the garlic chives and bean sprouts. Toss everything together.

Arrange on a plate and serve.
