Ingredients

  1. 1 bigBaingan (brinjal)
  2. 4Tomatoes
  3. 4Garlic
  4. 3Chopped onion
  5. 2Green chilli
  6. 1/2 cupFresh green garlic
  7. 1/2 cupSpring onions
  8. 1 teaspoonsCarom seeds
  9. 1/4 teaspoonsHing
  10. 1/2 teaspoonsTurmeric powder
  11. 1 teaspoonsKashmiri red chilli powder
  12. 1 teaspoonsDhanyia Jeera powder
  13. 1 tablespoonsGaram masala
  14. 4 tablespoonsMustard oil
  15. 1 tablespoonsGinger chopped
  16. 1 tablespoonsLemon juice
  17. as requiredSalt to taste

Cooking Instructions

    First of all make a slit in brinjal and put garlic, green chilli inside the baingan.

    Roast this along with tomatoes.

    Once roasted, cool, peel the skin of brinjal and tomatoes.

    Mash it properly.

  5. 5

    Now heat mustard oil, add hing, ajwain seeds.

  6. 6

    Then add chopped ginger and onion. Saute for a while.

  7. 7

    Then add fresh green garlic and spring onions. Saute.

  8. 8

    Add dry masala one by one. Then add mashed roasted brinjal and tomatoes.

  9. 9

    Add salt and cook till masala leaves oil.

  10. 10

    Finally switch off the flame and add lemon juice.

    Serve hot.
