Clean and chop bathua. Wash it thoroughly in running water. Keep aside for 15 minutes to drain excess water.

Now transfer chopped and washed bathua in pressure cooker. Add ginger garlic and green chilli and salt. Place the lid and cook for 2 minutes after first whistle. Switch off the flame and let pressure releases automatically. Let it cool.

Now transfer bathua in grinder and grind it to a smooth paste. Transfer it in a bowl.

Heat ghee in a pan. Add cumin seeds and when cumin seeds splutter put asafoetida, red chilli powder and coriander seeds powder and saute for 30 seconds.

Pour this tempering on bathua saag and mix.

Serve hot with chapatti or rice or bathua paratha.
