Dudh pitha or Dudh puli is a traditional bengali pithe or pitha . It is specially made during Makar Sankranti or poush sankranti(in Bengal) . Basically Dudh pitha is half-moon shaped stuffed dumpling(pitha) cooked in jaggery mixed dudh (milk) . But it’s not that common jaggery rather it’s a winter special bengali Date Palm Jaggery also knowns as nolen gur or notun khejur gur in bengali. Traditionally this recipe is made with rice flour but I am using all-purpose flour for preventing the pitha from getting hard .

Ingredients

  • For stuffing
  • 1 cupgrated coconut
  • 1/2 cupmawa /khoya
  • 2 tbspdate palm jagger/nolen gur
  • 1/2 tspcinnamon Powder
  • 1cardamom, crushed
  • Remaining ingredients.
  • 150 gAll-purpose flour/ Maida
  • 1 litre Full fat milk
  • 2cardamom, crushed
  • 10-15saffron strands (optional)
  • 1/4 cupdate palm jaggery/nolen gur

Steps

  1. 1

    Firstly, On a heated pan, add coconut, mawa, nolen gur, cinnamon Powder and 1 crushed cardamomo
    Or 1/2tsp cardamom powder. Stir and mix all ingredients together until the mixture becomes slightly sticky and thick. Remove from heat and keep the mixture aside to be used as filling.

    Further, in a big mixing bowl add maida, 1/2tsp ghee and water as required to make a soft, non-sticky dough.

    Now divide dough into small equal sized balls and roll them into thin round circles by using your fingertips.

    Add the coconut filling in each pitha. Fold and the edges to close the pitha. Set aside. Similarly make all the pithas and keep them ready.

    Now heat milk in a big pan or kadai, once the milk starts to boil, add the pithas and let the pithas cook for 20-25 minutes at medium-low heat. Stir gently so the milk does not burn at the bottom of the pan, careful to not break the pithas while stirring.

    Once the pithas are cooked and milk turn slightly thick, add saffron strands, cardamom powder add nolen gur cook for another 5-7 minutes and turn off flame.

    Dudh pitha is ready. Serve warm or at room temperature. Enjoy 😊.
