This is an authentic Maharashtrian Style of curry of fresh green pigeon peas and brinjal. Sole means fresh green pigeon peas and vange/vangi means brinjal in Marathi language. It is a spicy curry that goes with chapati or jowar roti
Cooking Instructions

Cut brinjal in medium size pieces and soak in water and keep aside till other preparation done

Now heat oil in a pan

Add mustard seeds and cumin
- 4
Once it starts crackling add chopped onion
- 5
Saute till it turns translucent

Now add ginger garlic paste,saute till its raw smell goes
- 7
Add finely chopped tomatoes, cook for 2,3min till it becomes soft

Now add all the dry spices, combine everything well and cut brinjal and fresh green pigeon peas

Mix well,cover and cook till brinjal gets cooked

Now add one cup of hot water, again cook for 5min

Now turn off the flame, sprinkle finely chopped coriander leaves

Serve spicy gravy with chapati

Here I have served sole bhaat(pulav), kadhi,boondi ladoo, chapati,salad and sole vange curry. Enjoy
