Bhindi / Okra / Ladies fingers is a staple vegetable in Desi cooking everywhere you go in India. Prepared and cooked in so many ways, this is a versatile vegetable. My daughter likes it stir fried and she loves the way her mom makes it! Bhindi is an excellent brain food and ideal remedy for constipation given it has a colon smoothening sticky substance in its juice. It's seeds are good for detoxification. We call it Bhendichi Bhaji! Try it for sure!

Ingredients

2 servings
  • 300 gmsWashed and dried ladies fingers
    Maharashtrian Style Bhindi. (Bhendichi Bhaji)
  • 2 tablespoonsCooking oil/ ghee
    Chawali Subji / Chawalichi Bhaji
  • 1Chopped onion medium
  • 1 tspchopped garlic
  • 3Chopped green chillies
  • 8-10Curry leaves
  • as per tasteSpices
  • 1 tspchilli powder
  • 1 tspcumin and coriander powders
  • as per requirementTurmeric powder, aamchur powder, saunf powder, salt
  • 1 tablespoonPeanut powder
  • as requiredChopped coriander leaves to garnish

Steps

20 minutes
  1. 1

    First, cut the ladies fingers into thin round slices. Heat 1 tablespoon of oil. Add mustard and cumin seeds. When they pop, add hing, onions, garlic and saute till aromatic.

    Then add chillies, curry leaves and saute well. Add turmeric, aamchur powder and bhindi pieces. Stir fry till they release water and become soft.
    Tip: the aamchur powder will prevent the bhindi from sticking and releasing threads.

    When bhindi is cooked, add salt, peanut powder and rest of the spices Add remaining 1 tablespoon oil.
    Finish the recipe with garnish of chopped coriander leaves. Serve with chapattis and daal. It makes for a delicious meal. Enjoy!
