Steps

Wash and chopped Methi leaves. Take a kadai, add oil and hing, and saute methi. Transfer to a plate.

Now add tomatoes in the same kadai, saute for a minute, add chopped brinjal, and mix well. Add salt and turmeric powder, and mix well. Cover a lid and cook it.

Now add methi, red chili powder, and coriander jeera powder. Combine well. Ready to serve winter-special sabzi. Enjoy with roti, bajara roti, poori, and rice.
