A variation on https://www.seriouseats.com/sichuan-dry-fried-green-bean-broiled-food-lab-recipe

Equipment:
Bowl big enough to toss 1 lb of green beans in
Sheet pan that can go under broiler

Tips:
1. If frying shallots yourself I like to do that first and then use the oil I fried shallots in for the recipe and dressing.

2. A store-bought balsamic dressing with some soy sauce added would work too I think

3. If using frozen green beans let thaw and dry off w/ a paper towel before tossing/broiling

Ingredients

20 mins
8+ as a side
  1. For Green Beans
  2. 1 lbtrimmed green beans
  3. 1 tbspoil (any oil works here)
  4. 1/2 tspsalt
  5. 1/4 tsppepper
  6. For Dressing
  7. 1/2 cupcanola oil (or any vegetable oil)
  8. 1/4 cupolive oil (can substitute with any other vegetable oil)
  9. 1/2 tspdijon mustard
  10. 1 1/2 tbspbalsamic vinegar (the cheap stuff is best for this in my opinion)
  11. 1 1/2 tbspwhite/apple cider/rice vinegar (can substitute w/ more balsamic)
  12. 1 tbspsoy sauce (can substitute w/ worcestershire sauce or an additional 1 tsp salt)
  13. 1 tspsugar
  14. 1/4of a small shallot, diced or grated (optional)
  15. 1 clovegarlic, minced or grated (optional, can replace w/ 1/2 tsp garlic powder)
  16. 1/2 inchginger, minced or grated (optional, don't replace with ginger powder)
  17. salt and pepper to taste (add after mixing if you think it's lacking something)
  18. For Topping
  19. Remaining 3/4 of small shallot, thinly sliced and fried in a small amount of oil until golden brown OR
  20. French's fried onions to top (the same kind you would top a green bean casserole with)

Cooking Instructions

20 mins
  1. 1

Place oven rack in top position, just under broiler

  2. 2

Heat broiler on high for a few minutes

  3. 3

Line a sheet pan big enough to fit green beans with foil (for easy clean up)

  4. 4

Place green beans in a bowl with 1 tbsp of oil, salt, and pepper and toss to coat the green beans evenly

  5. 5

Spread green beans out in a single layer on sheet pan

  6. 6

Place sheet pan under broiler until green beans start to look browned in spots and blistered (2-5 minutes depending on your broiler).

  7. 7

Remove from oven and shut off broiler, if not serving right away keep on sheet pan to reheat later

  8. 8

    Prepare the dressing

  9. 9

In a bowl or a plastic container big enough to hold all dressing ingredients and not be filled over halfway up combine all of the above dressing ingredients and shake until combined, if using a bowl whisk until combined (you can even use a fork for this). Plastic container is easiest because you should only have to shake it for 15 seconds or so.

  10. 10

    To Serve

  11. 11

Re-heat green beans if cold, mix dressing if separated, toss green beans with dressing (either on sheet pan, in bowl from earlier, on a serving plate, etc).

  12. 12

Top with fried shallot/onion if using.
