Wash the Matumbo thoroughly with running water

Add the Matumbo to a pot or sufuria of hot boiling water. Let it boil for 45-60minutes.

In the meantime slice your onions and blend the tomatoes

Once the water has evaporated from the Matumbo. Add two table spoons of oil. Let it brown slightly

Add the slices of onions and cover. Adjust heat to medium setting. Add salt as well. Let it fry till golden for a few minutes, ideally 10 minutes.

Add the tomato blend and cover. Let it cook for about 10 minutes, stirring every 5 minutes.

Add your paprika, garam and royco to a cup of water. Mix it then add it to the stew. Let it simmer for 5minutes. Then add the coriander leaves. Leave for 2 minutes and switch it off.

Serve with your favorite veges and ugali
