Beetroot dosa recipe known for its color, crispness & taste.
Steps

Wash the raw rice & urad dal & soak it for 3 to 4 hrs. Grind it with cooked rice in a mixer to make smooth paste. Add required water to make a batter. Transfer it into a bowl. Close it with a lid. Keep it for a half day. then add salt & mix it well.

Peel the beetroot & cut it into cubes, grind it & drain it.

Just add the beetroot juice to the required dosa batter.

Heat a pan, pour a ladle full of batter on it. Spread it in a circular motion. Drizzle 1 tsp ghee on it.
Cook it on both sides. remove from heat. - 5
For Coconut chutney;
Grind the grated coconut with ginger, green chillies,curd & salt. - 6
Heat a pan, then pour oil, add mustard, when it splutter,, add dry red chillies, curry leaves, grinded coconut mix. Stir it well. Remove from heat

Healthy, Crispy & Tasty Beetroot dosa is ready to serve with Coconut chutney.
