This is yet another yummy Veg dish made in my home for mealtimes. And this one is for sure a delicious variation.
It's simple yet absolutely filling. Goes well with both Phulkas and Parathas apart from the South Indian staple Rice of course.
With just a few ingredients, it's absolutely done in no time at all. A perfect side dish to many important meals. It's a great one.
A lovely Lunchbox idea as well. Can be relished with simple Rotis at Lunch. A steaming hot plate of Rice with this side dish is pure love for me. A comfort food, by all means, I just love it. It's a perfect choice for any day. Methi or Fenugreek Leaves added to it takes it to a different level altogether. It's a sheer bliss. Potatoes and Okra gets blended so well. Infact it's the universal fact that Potatoes actually blend along with any and every Vegetable on the Earth. It's a great one by all means. That is why it is loved by everyone.

In a pan, heat Oil and add the Cumin Seeds at first followed by the Ginger Garlic Green chilli paste. Saute for a minute and add the chopped Onions with half of Salt. Saute until translucent. Next, add the mini cubes of Potatoes. Saute until nicely done. Also, add half of the chopped Coriander Leaves and half a cup of water too if required. Otherwise just cover and cook until done.

After cooking for about 10-12 minutes, add the Okra or Bhindi. Also add the rest of the powdered spices as mentioned. Cover and cook until done on a low heat.

Saute until the raw smell fades away. Garnish with lots of chopped Coriander Leaves. Serve hot as a side dish to your favourite meal. This is a lovely combination and tastes yum with both Rice and Rotis. Enjoy!
