Mussels in Soda and Ginger Broth with Spinach

Ingredients

  1. 1 kgMussels, cleaned and de-bearded
  2. 1thumb ginger, sliced
  3. 4 clovesgarlic, peeled and smashed
  4. 1large red onion
  5. 1 bunchSpinach leaves
  6. 1/2 bunchchili leaves (optional) or add a whole long green chili
  7. 1 cwater
  8. 1/2 canLemon Lime Soda (sugar-free Sprite or 7-up)
  9. 1 Tbsppatis or thai fish (liquid) sauce or use salt(to taste)
  10. Dashcoarse ground Peppercorns
  11. 1/2 cubefish bouillon or broth cube
  12. Oil or butter

Cooking Instructions

  1. 1

    Heat oil or 1 Tbsp butter in a pot

  2. 2

    Sauté garlic, onions, then ginger.

  3. 3

    Add water to pot and bring to a boil.

  4. 4

    Drop in the mussels. Bring to a boil until shells open

  5. 5

    Lower heat to a simmer. Add Sprite, peppercorns, patis/salt.

  6. 6

    Bring to a simmer. Drop in the spinach and chili leaves. Taste and adjust seasoning.

    Turn off heat. Serve while hot. Eat with rice or as side soup dish.
