Italian Beef Salad with a Thai Twist

Thai-Style Dressing:
Place the Garlic and Chilli in a mortar with a pinch of Salt and grind into a paste. - 2
Combine the garlic past, Sugar, Fish Sauce and Lime Juice. Taste, add a little more Lime Juice if needed, and set aside for flavour to develop.

For the Salad:
Season the Steaks generously on both sides, with Salt and Pepper. Set aside to rest. - 4
In a salad bowl place the Lettuce, Cucumber, Radishes, Italian Peppers, Tamatos, Red Onion and Parsley.

Using a vegetable peeler, cut the Carrots into ribbons. Place ontop of the salad. Stain the drassing and drizzle about 60 to 90 ml of dressing over and set aside.

Heat the griddel over medium high heat, till hot. Place fat onto the grills and hold the steak up till the fat is renderes. Grill the steaks on either side for 2 minutes. When cooked to your liking, remove the steaks from the heat and leave to rest, pouring any cooking juices on top. Rest for five minutes.

Toss the salald and thickly slice the steak. Place the steak on top of the salad and scatter over the chopped Pistachios. Drizzle over the remaining dressing and serve immediately.
