Ingredients

  1. 2boneless chicken breasts, 6 ounces each
  2. 1/2 cupblack olives, sliced in half
  3. 1/4 cupchopped parsley
  4. Salt to taste
  5. Ground pepper to taste
  6. 1 teaspoonred pepper flakes
  7. 4 cloveschopped garlic
  8. 4artichoke hearts, drained from14.5 ounce can,diced
  9. 1/4 cuppesto
  10. 1 tablespoonolive oil
  11. 3 ouncesfeta cheese, cubed
  12. 4scallions, sliced

Cooking Instructions

30 minutes

    Prepare your ingredients.

    Grill chicken. I butterflied my boneless, skinless chicken breasts. Season chicken with salt and pepper before grilling.

    Saute garlic and pepper flakes in oil over low heat until garlic becomes fragrant.

  4. 4

    Add artichokes and olives. Saute a few minutes to heat them through.

  5. 5

    Add rest of ingredients. Cook until scallions are just turning tender.

  6. 6

    Spoon over grilled chicken.

  7. 7

    A nice accompaniment to this would be angel hair pasta with a simple tossing of extra virgin olive oil.
