Prepare all the ingredients.

Clean the mussels and squid, then cut the squid into pieces.

Peel and chop the bell pepper and garlic.

Bring water to a boil. When it starts boiling, submerge the tomato for 20 seconds, then remove it. Peel and crush the tomato.

Heat a paella pan with a generous amount of olive oil and sauté the shrimp and squid over high heat. Remove the shrimp and set aside.

Move the squid to one side of the pan, add a little more oil, then add the bell pepper and cook for 3 1/2 minutes.

Add the garlic, and before it browns, add the tomato and cook for a few more minutes.

Add the mussels and a cup of fish stock to help them open, stirring everything together. Cook briefly, then add a tablespoon of sweet paprika.

Add the rice and mix everything well.

Add the fish stock, a tablespoon of yellow food coloring, and salt. Cook for 18 minutes (check the salt halfway through and add more stock if needed).

With 5 minutes left, place the shrimp on top, trying not to stir the rice.

Cover with a clean kitchen towel and let rest for 5 minutes.
