Barnyard millet (samak or samvat rice/variche tandul) is low in calories and high in digestible fiber, protein and also contains calcium, potassium, phosphorus, amino acids and micronutrients such as iron and zinc.
As this millet is very healthy and nutritious, it is eaten during fasting days in India.

Clean the barnyard millet, wash it a few times, then soak it in enough water for half an hour (soaked rice cooks faster). Then drain the samak rice from the water.

Chop the almonds, pistachios, and cashews. Keep some chopped almonds, cashew and pistachios aside for garnish.

Boil the milk in a heavy-bottomed pan. Add soaked Samak rice, and saffron threads and boil on medium flame. Cook for 10 to 12 minutes until the Samak rice is well cooked and the kheer mixture has thickened.

Stir constantly so that it doesn't stick to the pan and scrape the sides of the pan. If the mixture is too thick, add a little milk.

Add chopped dry fruits, raisins, and cardamom powder and mix. Add sugar and mix well until sugar dissolves.

Stir for 2 to 3 minutes and switch off the flame.

Garnish with chopped dry fruits.

Serve the Samak Kheer hot or refrigerate and serve cold.
