I was going to make mini bran muffins this morning. I decided to make bran pancakes instead.
Cooking Instructions

Place cereal in a food processor, or ziplock baggie. Crush to a fine crumble.

Put crushed cereal in a large mixing bowl. Add milk, vanilla, brown sugar, applesauce, and oil to the mixing bowl. Whisk to combine. Allow time to rest and the crushed cereal to absorb some liquid.

Whisk in eggs.

Add baking powder, flour, and salt to form a thick batter.

Heat griddle to medium heat use a light non stick spray if your griddle tends to stick. Use 1/3 Cup to pour out batter onto the hot griddle. Flip pancakes when bubbles form on the surface and pop.

Serve warm with your choice of toppings, or eat plain. Topping suggestions: butter, nut butter / cookie butter, jelly, cinnamon and sugar, apple sauce, and or syrup.
