Walnut carrot cake

Cooking Instructions

Oven to 180c line baking tray with parchment and scatter walnuts, bake for 8-10 mins

Leave to cool on tray, reserve 150g of toasted walnuts in bowl and chop finest remaining ones

Grease and line 900g loaf tin, keep oven at same temperature

Pour oil, eggs and sugar into bowl. Mix, add grated carrot, and finely chopped walnuts and fold.

Add flour, bicarbonate, spices and stir
- 6
Put in tin and bake for 55 to 60 mins.

Leave to cool for 10 mins before putting on wire rack

For frosting, beat butter for few mins, add sugar and beat for 5. Add vanilla and spices to combine.

Drain cheese, and beat well to mixture, cover cake and add left over walnuts
