Walnut carrot cake

Ingredients

  1. 400 gwalnuts
  2. 175 mlsunflower oil
  3. 4eggs
  4. 200 glight brown sugar
  5. 250 gcarrots grated
  6. 200 gself raising flour
  7. 1 tspbicarbonate
  8. 2 tspmixed spice
  9. Frosting
  10. 125 gunsalted butter
  11. 125icing sugar
  12. 1 tspvanilla
  13. Halftsp missed spice
  14. 250 gfull fat soft cheese

Cooking Instructions

    Oven to 180c line baking tray with parchment and scatter walnuts, bake for 8-10 mins

    Leave to cool on tray, reserve 150g of toasted walnuts in bowl and chop finest remaining ones

  3. 3

    Grease and line 900g loaf tin, keep oven at same temperature

  4. 4

    Pour oil, eggs and sugar into bowl. Mix, add grated carrot, and finely chopped walnuts and fold.

    Add flour, bicarbonate, spices and stir

  6. 6

    Put in tin and bake for 55 to 60 mins.

    Leave to cool for 10 mins before putting on wire rack

    For frosting, beat butter for few mins, add sugar and beat for 5. Add vanilla and spices to combine.

    Drain cheese, and beat well to mixture, cover cake and add left over walnuts
