Ingredients

25 minutes
Serves 4 servings
  1. 1 1/2 poundscauliflower (about 700 grams)
  2. 3 cupswater (about 700 ml)
  3. 1bouillon cube
  4. 1 pinchcurry powder
  5. 1 pinchground nutmeg
  6. Salt
  7. Pepper
  8. Chives
  9. 2 tablespoonsthick sour cream (5% fat, or crème fraîche)

Steps

25 minutes
  1. 1

    Cook the cauliflower with the water and bouillon cube in a pressure cooker.

  2. 2

    Add the spices before blending.

  3. 3

    Blend everything until smooth.

  4. 4

    Add the sour cream just before serving.

  5. 5

    Stir to combine.

  6. 6

    Once served in bowls, sprinkle with chives.
