Ingredients

25 minutes

Serves 4 servings

1 1/2 poundscauliflower (about 700 grams)
3 cupswater (about 700 ml)
1bouillon cube
1 pinchcurry powder
1 pinchground nutmeg
Salt
Pepper
Chives
2 tablespoonsthick sour cream (5% fat, or crème fraîche)

Cook the cauliflower with the water and bouillon cube in a pressure cooker.

Add the spices before blending.

Blend everything until smooth.

Add the sour cream just before serving.

Stir to combine.

Once served in bowls, sprinkle with chives.
