In a large mixing bowl, combine the milk, sugar, salt, eggs, orange blossom water, and flour. Knead for 1 minute. Add the crumbled yeast and knead for 10 minutes. Then add the softened butter and knead until the dough pulls away from the sides of the bowl. Let the dough rise for 4 hours in a warm place (about 77°F/25°C). (Tip: You can use your oven—preheat to 86°F/30°C, then turn it off before placing the dough inside.)

Punch down the dough, lightly flour your work surface, and shape the dough into a ring. (Tip: Make a hole in the center with your finger, then gently stretch and shape into a crown.)

After a second rise of 2 hours, brush the top with a mixture of egg yolk and a splash of milk. Sprinkle with pearl sugar.

Bake at 350°F (180°C) for about 20 to 30 minutes using the convection setting, depending on your oven. Do not preheat the oven before baking.
