Soak white chickpeas in water for 8-10 hours. Add salt, pinch of soda and 2 glasses of water to chickpeas and boil it till 4-5 whistles. Add onion to the mixer jar and crush it. Then add tomato, ginger and garlic and crush them too.

Heat oil in a pan, add onion puree and saute until golden, then add tomato, ginger, garlic puree and saute for 5 minutes.

Then add asafoetida, turmeric, red chilli powder, coriander powder, cholemasala, salt and mix well. After 2 minutes add boiled chickpeas and mix. Let it boil on low heat for 5 to 7 minutes.

Now add amchoor powder and kasoorimethi and mix, switch off the gas. So, Chole Masala is ready, serve it hot with poori or rice.
