Take all the ingredients except water in a bowl, mix all dry ingredients really well and rub with your fingers to incorporate ghee in the flour.

Add lukewarm water slowly and knead it to a smooth dough. Cover and let it rest for 15 -20 mins.
Now divide the dough into 2 big balls and roll it out. Now roll it in the shape of a swiss roll. Cut it into a spiral shape. Now press to flatten it. Now use a fork to prick holes in the mathri. - 3
Heat oil for deep frying, drop mathri in hot oil and fry it in medium heat oil till golden.

Remove them and drain in some paper towel.
Cool it down and store in an air tight container.
