Spicy Tofu Chazuke 茶漬け (Vegan)

This is not similar to traditional Japanese chazuke at all, but it's definitely very tasty! 🍵

Chazuke, in its simplest form, is rice and green tea (or sometimes just hot water). It used to be a way to rehydrate old rice and was eaten by the poor, but it's now popular in Japan. There are even instant chazuke pots! 🇯🇵

My version is aimed at vegans and people who like spicy food! 🌶️

Ingredients

10 minutes
1 person
  • 250 gCooked rice
  • 1pot of green tea
  • 100 gFirm tofu
  • 6Dried mushrooms
  • 3Chilli peppers
  • A fewstrips of nori
  • Chopped spring onions as garnish
  • 1 dashsoy sauce
  • Sunflower oil

  1. 1

    Ideally, you should use day-old rice. If you don't have any, cook some and let it sit for 30-60 minutes. The rice to water ratio is around 1:1.5. Best to use a rice cooker.

    Cook some green tea. I suggest using Japanese gyokuro tea because its sweetness goes well with the rice. Sencha or other green tea is fine too, though.

  3. 3

    Coat a pan with oil. Add some soy sauce and fry and flip the tofu cubes until they're slightly golden brown.

  4. 4

    Chop the chillies into thin slices. I prefer fresh chillies, but you can fry them with the tofu as well.

  5. 5

    Rehydrate the dried mushrooms in a cup of warm water.

  6. 6

    Cut nori into thin strips. I suggest simply using scissors.

  7. 7

    In a bowl, pour the tea over the rice. Add tofu, mushrooms, chillies, and nori. Add a dash of soy sauce to the tea and stir.

  8. 8

    Chop spring onions into strips and add to the bowl, as garnish. Serve with some tea. Enjoy your meal!
