Peel the back of the irish, wash and boil till soft.

Peel the back of the carrot and grate it

Pour vegetable oil in a pan. Add sliced onions, grated pepper and stir fry for 2 mins.Add seasoning,spices, curry and continue to stir

Whisk the eggs and add to it. Stir immediately then add the grated carrot. Continue stirring till everything is mixed altogether
