When I bake normal madeleines, I usually add potato, tomato, lemon, or vegetable juice, but no egg, while checking the instructions on the pancake mix packaging.

Cooking Instructions

Melt the butter. Preheat the oven.

Grate lemon zest and add only the yellow zest. Squeeze the juice and add.

Combine all of the ingredients.

Pour into a mold, bake for 15 minutes at 355°F/180℃. Adjust to suit your oven.
