Salmon, Leek, and Green Onion Fried Rice

Whenever I have lots of leftover rice, I make this.
I make it with things I always have in the refrigerator, so it doesn't take any extra effort or money to make.

Mix the eggs into the warm rice before stir frying. By doing this and stir frying the rice over high heat, you'll have nice separated grains. The only seasoning is dashi stock granules. It doesn't get too salty, but still adds lots of flavor. For 4 servings. Recipe by Nyanyadeko

Ingredients

4 servings
  1. 1 pieceCooked salmon (salmon flakes are OK)
  2. 1 stalkJapanese leek
  3. 4to 5 stalks Green onion or scallion
  4. 360 mluncooked Plain cooked rice
  5. 2Eggs
  6. 1Dashi stock granules
  7. 1 tbspVegetable oil

Cooking Instructions

    Finely break up the salmon. Chop up the leek and green onion.

  2. 2

    Add the eggs to the rice. Microwave the rice first if it's cold.

  3. 3

    Mix the rice and egg together well with a ride paddle.

  4. 4

    Heat oil in a pan, and quickly stir fry the egg-rice over high heat.

  5. 5

    When the rice grains have separated, add the salmon and leek and continue stir frying. Season with dashi stock granules. Taste, and adjust the seasoning.

    Transfer to serving plates, scatter with some chopped green onion, and it's done.
