In a mixing bowl, put maida,salt, sugar and baking powder. Mix. Next put oil and mix.

Next add curd and mix again. Finally add water gradually to knead a soft dough.

Next brush oil on the dough nicely. Cover and keep aside for 15 minutes of resting.
After resting knead the dough again. You get a perfectly soft dough for your bhatura. - 5
Next heat oil for deep frying the bhature.
Pinch out a small portion of dough. You can use rolling pin or even hand to give bhature it's shape. - 6

Put bhature in hot oil and splash oil for it to puff up.
Fry both sides by flipping,till done. Drain extra oil and keep aside. You need to serve hot hot bhature so prepare chole prior to making the bhaturas. - 8
For making chole, boil the chickpeas with the above mentioned ingredients. As cooker cools and releases pressure. Take out the boiled chickpeas in a vessel. Add tea decoction. Mix well and keep aside. You can also add tea decoction while boiling chole.

Next heat a kadhai with oil. Splutter the whole spices as mentioned in the ingredients. Then add chopped onion. Saute till brownish. Next add in the masala paste.

Add salt for masala, sugar, red chilli powder and chole masala. Mix and cook the masala till it leaves oil.

Now add in the boiled chole. Add the water too. Let it cook all together.

Next add in garam masala, black pepper powder, crushed ajwain and crushed kasuri methi.
Let all flavours combine well.
Cook till your preferred consistency. Switch off. Put ghee/ butter and mix. Put slit green chillies and ginger julliens if you like it spicier.
Let it settle for some time before you serve.
Finally give a nice gentle mix and serve with hot bhaturas, onion, chilli and lemon wedges!! - 13
