Wash and dry oxtail then coat in flour. Then place in pot with olive oil and brown.

Once browned, remove from pot and add onions, chilies and garlic.

Once onions become translucent add 1 Tbs spice and black pepper, mix in and add your meat and a cup of water.

Add your red wine and allow to boil for the next 1 1/2 hour.

Add your potatoes, carrots and butternut and allow to cook again for the next 2 hours. Constantly check to add water.

Now add your stock, 1 Tbs spice and salt for taste along with your green beans, mushrooms and butter beans. Allow to cook for 45 min - 1 hour. All done 😋

Serve with rice or dombolo.
