This dish was my grandma Mimi’s favorite item I make and now my son Michael 19 will come home specifically to eat this!
Cooking Instructions

Start w cooking the chicken. Using the selected seasoning (Cajun) or a mix of red pepper and Cajun) and melt 1/2 tablespoon of butter in a nonstick pan.

Put chicken into the hot pan that had been generously seasoned place on med high, 4 minutes per side until golden brown and seasoning is browning.
Flip. Then cut open and cool each end. Remove from heat. Set aside. - 3
In a small nonstick pan use 1 tbsp olive oil and 1/2 tbsp of butter get hot to med. Add all vegetables and shake on more Cajun spice and a few dashes of salt and pepper. Sauté until a little softer 3-5 minutes remove from heat.

Start boiling pasta water. I use a thick lemon noodle it looks like a linguini noodle. You want something the pasta w will soak up. 1/2 box or bag

Transfer veggies w chicken. Wipe out small pan. Leave juices.. add remainder of butter, Sprinkle the seasoning 1 tbsp red pepper, 2 tbsp Cajun, 1 tbsp paprika. Turn up to med/ high heat. Add 1/2 cup of cream.. start stirring, once it bubbles add a pinch of nutmeg, and Parmesan continue to stir.. let it get thicker.. add more cream if needed and spices turn down to med/low simmer 2 minutes.

Cut up chicken and return back to the pan w vegetables.
Pour in cheese sauce mix. Set this on simmer.. - 7
Drain pasta but put a glass bowl under strainer to catch the water. Take noodles DONOT rinse. Add lemon oil and take thongs and toss noodles so they don’t stick. Set pasta water aside

Turn up chicken items / sauce stirring for 3-5 minutes..

Add noodles back up the pasta ! Tossing. Add 1./3 cup pasta water to thicken. Toss

Take your leftover lemon and cut 5-7 slices and one additional end of the green onion, the green scallion part.

Serve up pasta after it’s mixed abs enjoy! Add lemon slices, green onions and Parmesan to taste! Enjoy
