Sugar free fig rolls😋😋

One of my favourite biscuits are fig rolls, so I thought I'd make some with no added sugar.
I've got to say these are delicious 😋😋 and very easy to make.

Put Flour ground almonds and baking powder into a bowl with a pinch of salt. add the butter and rub in with fingertips until you have a mixture that resembles fine breadcrumbs. Add egg yolk and milk at a time until soft dough forms. make sure the dough isn't too crumbly and if it is add a little more milk. Form the dough into a ball and chill in fridge for 1 hour.

Roughly chop the figs and put them in saucepan with the orange juice zest and salt.
Add 150 ml of water, simmer until the figs start to break down and just about all the liquid has evaporated this will take about 15 to 20 minutes. Keep stirring regularly. Remove the pan and blitz to a paste and leave to cool for half hour. - 3
Preheat oven or airfryer.
Roll out the dough in half lengthwise so you have 2 long strips. Place paste down middle and bring the sides up to center. - 4
Cut each strip into 8 pieces, about 4 cm long and arrange them on a baking tray. Mark each fig roll lightly on the top with a fork to make lines. in airfryer I set on bake for 8 minutes in oven 15/20 minutes.

When they've cooled a bit press some of the fig neatly into the roll.
