Place a saucepan over medium heat. Add a splash of water to help prevent the milk from sticking.

Pour in the milk, add the cinnamon sticks and the lemon peel. Make sure to peel the lemon thinly to avoid the bitter white pith.

When the milk comes to a boil, add the rice. Cook over low heat for about 40 minutes, stirring often to prevent the rice from sticking. When there are 5 minutes left, remove the lemon peel and cinnamon sticks.

Add the sugar and cook for 5 more minutes. Stir in the butter, mix well, cover with plastic wrap, and let cool before refrigerating. Before serving, sprinkle ground cinnamon on top. Delicious!
